Very quickly he became half Chef de partie in the establishments:
“Côté Jardin” restaurant of the “Royal Monceau” **** L in Paris
“La Belle Otero” restaurant of the “Carlton” **** L in Cannes
He will then be 2nd sous-chef in the Restaurant “Le Méditerranée” and “Chez Panisse”
From the SOFITEL Le Méditerranée Hotel in Cannes
After a two-year interlude as Chef de Cuisine at the “Bistrot de Mougins” in Mougins, he will once again join the SOFITEL Le Méditerranée Hotel in Cannes but as Chef de Cuisine of the “Le Méditerranée” Gourmet Restaurant (renamed more late 360 °) and Provencal Bistro “Chez Panisse”.
Recognized by his Fathers, he is a member of the Prosper Montagné Association and the Culinary Academy.
In 2008 he developed the 360º restaurant there and also at the Thermes Marins de Cannes the OBento concept, well-being cuisine with a philosophy
